Prep 8 min
Fat-free quark whisked with milk and a scoop of whey turns into something close to a set mousse without gelatine, cream or eggs. The raspberries are folded in half-crushed, so the sharpness runs in streaks instead of disappearing.

Whey Protein Powder
1 scoop (30 grams)
Milk 2.5%
60 milliliters
Honey
2 teaspoons (14 grams)
Raspberry
120 grams
Dark Chocolate 70% · Garnish
2 squares (20 grams)
Steps
Whisk the quark with the milk until there are no lumps left. Fat-free quark is stiff and will not take the powder otherwise.
3 min
Add the whey and honey and whisk hard for a minute. The mixture lightens and holds a soft peak.
2 min
Crush half the raspberries with a fork and fold them through, leaving streaks rather than mixing them in evenly.
1 min
Spoon into two glasses, top with the rest of the berries and the grated chocolate, and chill 15 minutes.

Serving suggestion
Eat it cold. Warm quark tastes flat.
Storage
Keeps two days in the fridge covered. It weeps a little; stir it once before eating.
Notes
Any berry works. Vanilla whey suits it better than chocolate here.
