Prep 5 min
Five minutes, and the whole of it is about temperature: the honey goes in hot so it dissolves, the coffee goes on the ice cool so it does not melt it.

Espresso
2 portions (60 milliliters)
Milk 2.5%
200 milliliters
Honey
2 teaspoons (14 grams)
Cinnamon, ground
1 pinch
Steps
Brew two espressos and stir the honey into them while they are still hot. Honey will not dissolve in cold coffee — it sits on the bottom of the glass.
2 min
Let the coffee stand two minutes off the heat. Poured straight onto ice it melts it and you drink water.
2 min
Fill a tall glass with ice, pour the milk in, then the coffee over the back of a spoon so it sits in a layer. Dust the cinnamon over.
1 min
Serving suggestion
Stir it before the first sip — layered, the first mouthful is all milk.
Storage
Made and drunk. Coffee left standing over ice goes bitter and watery.
Notes
Coffee frozen into the ice cubes instead of water keeps it from thinning as it melts.
