Prep 10 min
The drinkable half of cold beetroot soup — same kefir, same cucumber and dill, without the beetroot. It is a drink, not a soup, and it is salted like one.

Ingredients

Kefir
500 milliliters
Cucumber
150 grams
Dill
6 sprigs (12 grams)
Garlic
1 clove (3 grams)
Salt
1 pinch
Black Pepper
1 pinch
Steps
Grate the cucumber coarsely and squeeze the water out of it with your hands. That water would thin the kefir into something watery.
4 min
Whisk the kefir with the salt, the pepper and the garlic crushed to a paste.
3 min
Stir the cucumber and the chopped dill in.
2 min
Chill 15 minutes before pouring, so the garlic spreads through it instead of sitting in one mouthful.
15 min
Serving suggestion
Very cold, in a tall glass, on a hot evening instead of a meal.
Storage
One day in the fridge. Shake it before pouring; the cucumber settles.
Notes
Salt it a little more than tastes right while it is still warm from the room. Cold blunts salt, and an under-salted one tastes of nothing.
