Beef and Broccoli Stir-Fry with Rice

Sirloin seared in a hot pan, broccoli steamed in the same pan, and a soy and honey sauce that thickens on the heat.

The order matters more than the ingredients here: the beef is seared and taken out, the broccoli steams in the same pan, and everything goes back in with the sauce for the last thirty seconds. Cornstarch turns the soy and honey into a glaze instead of a puddle.

Steps

  1. Slice the beef thinly across the grain — short fibres are what keep it tender in a fast fry. Cut the broccoli into small florets.

    5 min

  2. Stir the soy sauce, honey, cornstarch, chilli flakes and 4 tablespoons of water into a smooth sauce.

    2 min

  3. Sear the beef in half the sesame oil in a very hot pan for 1–2 minutes, until browned outside and still pink inside. Lift it out.

    3 min

  4. Add the rest of the oil and the broccoli with 3 tablespoons of water, cover and steam 3 minutes, until bright green and just tender.

    4 min

  5. Add the garlic and ginger for 30 seconds, return the beef, pour in the sauce and toss until it thickens and coats everything.

    2 min

  6. Serve over hot rice with sesame seeds and sliced green onion.

Serving suggestion

Rice noodles work instead of rice, and take the same sauce.

Storage

Keeps two days in the fridge. Reheat fast in a hot pan; a microwave overcooks the beef.

Notes

Flank steak or rump work as well as sirloin, as long as they are cut thin and across the grain.
