The sauce is built in the same pan the meatballs browned in, so nothing that stuck to the bottom is wasted. Flour thickens it before the cream goes in, which means 15% cream is enough and the sauce still coats the buckwheat instead of running off it.

Steps

  1. Grate the onion for the meatballs and mix it into the beef with the egg, crushed garlic, salt and pepper. Roll 20 balls of about 35 g.

    8 min

  2. Brown them in the olive oil in two batches, so the pan stays hot. Set them aside — they finish in the sauce.

    8 min

  3. Slice the mushrooms and fry them in the butter over high heat until the water they release has boiled off and they start to colour. A crowded pan steams them grey.

    6 min

  4. Add the second onion, chopped, and fry 3 minutes. Stir in the flour and thyme and cook one minute more.

    4 min

  5. Pour in the stock first and stir it smooth, then the cream. Return the meatballs and simmer 8 minutes, until the sauce coats a spoon.

    8 min

  6. Serve over the buckwheat with parsley on top.

    2 min

Serving suggestion

Mashed potato or wide noodles take the sauce as well as buckwheat does.

Storage

Three days in the fridge and better on the second. Reheat on low — boiling splits the cream.

Notes

Grating the onion rather than chopping it matters here: pieces of raw onion make the balls break apart.
