A vegan curry of chickpeas and spinach in coconut milk, on basmati rice, in forty minutes.

Canned chickpeas mean there is nothing to soak, so the only real cooking is the ten minutes the coconut milk needs to thicken. The passata is fried down before the milk goes in — a watery tomato base makes a thin curry.

Serving suggestion

Warm flatbread instead of the rice works just as well.

Storage

Three days in the fridge and it freezes well. Add the lemon fresh after reheating.

Notes

Use canned coconut milk, not the carton drink. The drink has a tenth of the fat and will not thicken.
