Half rye gives the flavour and half wheat gives the structure, because rye alone has too little gluten to hold a roll's shape. The dough rises once in the bowl and once as shaped balls, which is what makes the crumb even.

Ingredients

Dough

  • Rye Flour

    250 grams

  • Wheat Flour

    250 grams

  • Dry Yeast

    7 grams

  • Honey

    1 tablespoon (21 grams)

  • Sunflower Oil

    2 tablespoons (28 grams)

  • Salt

    10 grams

Topping

  • Sesame Seeds

    2 tablespoons (18 grams)

Steps

  1. Warm 320 ml of water to 35 °C — hotter water kills the yeast. Stir the yeast and the honey into it and leave it 10 minutes, until the surface foams.

    12 min

  2. Mix both flours with the salt in a large bowl. Pour in the yeast water and the oil and work it into a rough dough.

    5 min

  3. Knead it 10 minutes on a lightly floured surface. Rye dough stays sticky and never gets as springy as wheat, so do not keep adding flour.

    10 min

  4. Cover the bowl and leave it somewhere warm for 60 minutes, until the dough has doubled.

    60 min

  5. Knock the dough back, divide it into 10 pieces of about 85 g and roll each one into a ball.

    10 min

  6. Set them on a lined tray a hand's width apart, cover them with a towel and leave them 40 minutes.

    40 min

  7. Heat the oven to 220 °C. Brush the rolls with water and scatter the sesame over them.

    5 min

  8. Bake them 25 minutes. A finished roll sounds hollow when you tap its bottom.

    25 min

  9. Cool them on a rack. Cutting into them hot leaves the crumb gummy.

    10 min

Serving suggestion

Split one while it is still warm and put butter and a slice of cheese in it.

Storage

Two days in a paper bag, or freeze them baked and warm them from frozen at 180 °C for 8 minutes.

Notes

The rise takes longer in a cold kitchen. Go by the dough doubling, not by the clock.
