Turkey Chili with Kidney Beans

A lean chili that still tastes long-cooked, done in under an hour.

Ground turkey has almost half the fat of medium beef, so the depth has to come from somewhere else: the paste and the spices are fried in the pan before any liquid goes in, which is what stops a quick chili tasting thin. The beans go in at the end so they hold their shape.

Serving suggestion

Rice, a baked potato or a spoon of Greek yogurt all suit it.

Storage

Better the next day. Keeps four days in the fridge and freezes for three months.

Notes

One teaspoon of chilli flakes is mild. Double it if you want it to bite.
